Double Hollow Ground Knife
This Chiarugi double hollow ground knife has a pretty wooden handle. The steel is soft enough to sharpen easily and hard enough to hold its edge well. The weight of the blade feels good in your hand and it doesn't chatter on the reed. I won't offer a product I don't like, and there are a lot of bad knives and overpriced knives out there. I use this one.
